Growing up one of the main staples I could always count on were Christmas Cookies from Gram. Now that I'm older (and a bit piggier) I can bake my own! After years of practice this year was the first year that the cookies turned out just like Gram makes. Sammi came over and helped me bake a TON of cookies to pass out as gifts and to pig out on. We made Snickerdoodles (Gram's recipe, sorry not sharing!), Chocolate Chip (recipe on the back of Hershey morsels package), White Chocolate Raspberry Thumbprints (my recipe - see below), and Sugar Cookie (also Grams, sorry). I have only shown pictures of the Sugar Cookies, because lets face it... everything else is pretty standard. |
White Chocolate Raspberry Thumbprint Cookies
You will need:
- 1 package (or batch of homemade) Sugar Cookie mix
- Whatever that recipe needs as well
- 1 jar of raspberry jam/preserves
- 1 cup white chocolate morsels
- 1 mini muffin tin
- Combine sugar cookie recipe as called for.
- Place into mini muffin tins filling 3/4 of the way (this will typically yield 1 pan of 24 and 1 extra or so cookie's worth).
- Using pointer finger (not thumb...mine's too big) press in a divot into dough.
- Fill with jam in 1/4 tsp. amounts. This amount can very depending on how filled you want, just make sure it doesn't spill over the side of the dough.
- Bake as directed and add approx. 2 minutes to cooking time.
- Cool thoroughly, this is VERY important. if the cookies are still at all warm the white chocolate will drip off.
- Melt 1 cup white chocolate morsels in microwave for 75 second and stir until small ribbons drizzle off of the back of a spoon.
- Drape and drizzle over cookies in two directions.
- Cool again.
